Thisbook is about the real French that is essential if one actually lives in France. So there is a most interesting chapter on food and drink. In this way we learn that there are four ways a steak can be cooked: Et la cuisson? Bleu (barely seared, i.e. raw); saignant (rare); à point (medium rare); and bien cuit (well done). On the latter, the author says this: “The waiter, proud in his role of self-appointed steak expert, will not take kindly to someone asking for a steak that he considered to be overdone. I have heard steak house waiters tell customers that if they want their steak bien cuit they can go and eat it somewhere else.” And thus we have the cultural dissonance which so many English-speaking people have observed!
